I spent my Sunday and Monday this week making the last batch of panettone for the year. We are literally wrapping it today. It does not get fresher then this, though I like to age it a few weeks to allow the flavours to blend. It will be great for Christmas, excellent for New Years and continueing to improve into the new year.
