Tasting Plates
The idea of a progression is central to creating your cheese plate. Always start with a mild cheese and "progress" to stronger and bolder flavours, usually younger, fresh and mild to older or aged cheeses that impart more complexity. Alternate textures as well where possible from soft and springy to firm, to oozy, to hard and brittle (such as Oude Kaas or Parmigiano-Reggiano).
