The rains finally quenched Vancouver Island and brings forth the autumnal edible treasures. It's porcini time and we incorporate this wild and uber-organic food into select menu items. A wonderfood, porcini is high in protein, vitamins and minerals--especially high in iron and fibre (both are 28%). A delicate and highly prized ingredient seasonally available.
